  1. A fair number of the “protesters” on the news had masks, but they were “concealment” masks, not “contagion” masks. A lot of the “protesters” were mighty close to one another and shouting or exerting themselves.

    If we’ve been told the truth* about the need for masks and distancing and the contagiousness of the Chinese Flu, we should be seeing a big up-tick in infections in about two weeks.

An hour or so ago I was listening to a “science news” podcast which was all about how we’re all gonna diiiiiie if the house arrest is released too soon and how no, the strict measures are not an overreaction. At the same time I glanced at some news headlines (while waiting for the server I’m babysitting to finish something, a recurring theme) and saw subhumans concerned citizens looting and burning. About all I could think of was “Who are you going to believe, me or your lying eyes?”

      (Along the same line, one of the mentions of the “protests” was that the great majority of the “protesters” were white. Um, not what I’m seeing, Champ. Now, I’m nowhere near any of them and the photos and video might have been curated by white supremacists … but I doubt it.)

    The WuFlu Blues haven’t even finished playing and the DJ has turned up There’s A Riot Going On to 11.
    Before that was the Shampeachment Tango.
    Since 2009 all can I say is that the old Randy Newman chestnut, Mama Told Me Not To Come, has been the overall theme of this Nightmare Party.

    I’m happy to see SteveF and Kennycan beat me to it.

    Still working in the industrial location that requires a mask. I expect to finish in the morning and go back to being mask free. I’m thinking I’ll have a mask burning party at home.

  4. TOPIC – BBQ

    What do you gents like and what secrets do you have that you’re willing to share

    1. Mike, Kenny, and I are all in NC where “BBQ” is a noun. Pig, cooked over hickory coals and basted with vinegar. Eastern NC BBQ. Nothing better.

      Now, as a verb I’m partial to pork ribs. I have a one hour method for quick results and a 3 hour one that yields a bit more smokey flavor and tenderness.

      Start with the sauce and Chef Mojo once described it perfectly:
      1 cup cider vinegar
      1 cup distilled white vinegar
      1 T dark brown sugar
      1 T red pepper flakes
      2 t coarse ground black pepper
      1 t salt

      Place all the ingredients in a pint jar and shake. Let it sit on the counter 2 – 3 days before use giving it a shake occasionally. “Use it for mopping, finishing and on the bun.”

        1. Welcome. That is standard Eastern North Carolina BBQ sauce. Chef Mojo just wrote it all down. It is delicious IMO.

    2. To make a brisket finish early, have dinner later. To make a brisket finish late, have in-laws waiting for three hours for it it finish.

      I have brisket timing down to a science!

  5. I don’t think people appreciate the momentous things President Trump has done in 24 hours.
    The declaration of Hong Kong as no longer having special status is huge.
    Unfortunately that means that my beloved Hong Kong will be a zone of destruction and cease to be the City of Freedom in Asia it had been for so long. I pray for my relatives and friends there.
    Meanwhile, declaring Antifa a terrorist org and declaring that the “protests” will be stopped by the Governors or else it will be stopped by President Trump is going to mean another massive change in our approach to this issue that was lost when Nixon buckled under the Kent State justified shootings.

    1. I hate to see it, but it seems clear the run of the greatness of Asia, Hong Kong, is over.

      It would be hard to find a location on this planet so unique and such a sea of freedom within a slavery cell.

      The communists, in china and around the globe, destroy everything in their sight.

  6. One hour ribs:
    I usually cook two slabs and cut them in half or thirds to best fit on the grill.

    Lump hardwood charcoal. You need a grill with enough surface to get the ribs to the side of the coals.

    Very hot coals, fanned to red hot perfection. Place the ribs as close as your grill allows, mine is about 1/2 to 1 inch. Brown but do not burn, usually about 2 minutes then flip. Do this several times and do not let the rib blacken, just a rusty color. I close the lid while waiting to flip but peek to make sure all is well. Once browned I move to the side off the coals and drop the coals down a bit (or raise the grill surface). Now I cook about 10 minutes per side in very high (250+ F) heat, flipping every 10 minutes until done. During the last half hour I mop on the Chef Mojo sauce. Sometimes I add a bit of “Bone Sucking Sauce” at the end to finish it off.

    No dry rub, no pre cooking, just the ribs.

  7. Texas Pete, baby! Ain’t nothing like it but more of it. Although truth to tell, North Carolina, South Carolina, Texas, Kansas City, or Memphis style, I can’t recollect ever eating ANY BBQ I didn’t just love.

        Still, I’m Old Skool and in NY when we wanted Hot Sauce it had to be McIlhenny’s Tabasco. I love it so much I bought a Red T-Shirt with the logo!
        I have to admit that I am a Cajun and Creole fan as well as Tex-Mex starting all the way back to my College Days, when I was a all purpose worker in a great Mexican Restaurant in my hometown. From dishwashing to cooking to short order ding ding cook I did it all there.

        1. I’ve always found Texas Pete adds flavor more than heat. It’s warm, a mild heat IMO. I like the flavor.

      Bar-B-Que is kinda like a blowjob. Even a bad blowjob is pretty damn’ good. And likewise there’s no such thing as “bad” BBQ.

  10. chinaVirus in North Carolina as of today just after the communist governor Cooper lets the RNC convention scheduled for Charlotte get moved to another state –

    939 dead. 17% of those deaths are under age 65 or 160

    160 deaths under age 65 is 0.0016% chance of dying in NC of the chinaVirus – 16 thousands of one percent.

    NC has approximately 1500 traffic deaths a year, across the age groups. I demand they stop driving in Raleigh. After all, the death toll for driving is much higher than that of the damn virus.

    It gets even better – 62% of the deaths are congregate living, most in nursing homes, some in retirement homes, a handful in prisons. 584 dead in that setting.

    The reality – if you are not over 65 and in a nursing home stay away from cars (and ladders 🙂 ) if you wish to reduce your chances of dying.

      Meanwhile as far as I can tell, compared to other cities our “protests” have been relatively “peaceful”.

      Come November, get out and vote Dan Forest.
